This alternative to refined sugar is relatively new yet gaining popularity very quickly. It has a wonderful caramel like taste and toffee like smell. It is produced in Indonesia where young coconuts are harvested and the sap is drained and heated to form a thick syrup which is then dried leaving these wonderful crystals of natural sweetness.
